Bone broth

Decided to make Otto some bone broth, never made it before. I am following the recipe with bones from whole roast chicken and quite a bit of the leg meat etc. apple cider vinegar. I have another 8 hours to go in the slow cooker. I am assuming that all of the fat hardens on the top when it has been in the fridge for a while so when removed it is fat free??? Anyone done this before? I am pretty useless with recipes although this one just seemed too easy to fail. :D

we also need a schnauzer.

Depending on how much fat there is I do leave a bit of it in the broth, but I would say it would be very low fat if you took it all off.
