Your schnauzer’s breeder should be able to help, at least with the puppy grooming or, if they are too distant from where you live, they may be able to recommend another schnauzer breeder who could guide you. All good breeders will know how to groom their dogs and should always offer guidance to new puppy owners. It will be less costly in future if you can do the grooming yourself as the cost of hand stripping or even clipping a dog on a regular basis will be expensive if you want to keep the true schnauzer look. There are grooming salons in London with qualified groomers who can hand strip / style a schnauzer if you are wanting the schnauzer look and to retain the harsh coat but you will pay quite a lot for this service.
The breed clubs also have lists of groomers but it may mean travelling a distance to reach them. This is from the Schnauzer Club of Great Britain:

The shedding is most likely from the puppy coat as you say but schnauzers can shed some hair even as adults although it is far less than other breeds.
